I was always considered to be a very healthy and active individual by everyone that knew me. My lifestyle was one that did not include alcohol, smoking, drugs, or fast food. I was athletic with very little fat – 225 pounds, 46 inch chest, and 33 inch waist. I was careful to watch what I put in my body in the way of food and drink, especially avoiding anything with preservatives in them. I didn’t eat junk food. I limited my sugar intake. I never drank carbonated beverages or sweet fruit drinks of any kind. I was a steak and potatoes and vegetable loving kind of guy.
As healthy as I thought I would, little did I know that I was dying on the inside. Thus started my journey on the road to recovery from chronic illness that offered little more than a death sentence on my life if I did not change things drastically in my diet. Vegan Overcome started out as a personal journal on my transition from a predominantly meat, potato, and dairy sort of diet to an all natural, all organic, all raw vegetarian diet. That was several years ago now. Today, now that I am free of chronic/terminal illness, my passion for health and longevity, and my love for teaching others about how they can have optimum health and enduring wellness is a part of my everyday life.
If you hang around me for long, you will inevitably end up with a green mustache and eat things you never thought you would.
The conviction of my belief that “we are what we eat” is rooted in my own story of recovery from a life-threatening illness that was the result of my heavy meat, potatoes, and acidic foods diet. My story is not unlike the tens of thousands of people who are living proof that changing your lifestyle from that of living to eat (feeding your appetites) to one of eating to live (feeding your body what it needs) can change your health and your outlook on life for the better.
If you are ready and willing to see your life forever changed through modifying your present lifestyle to wisdom in your food choices, you can experience a whole new outlook on life. It’s not as difficult as you might think and you will see a substantial increase in your health, energy levels, and overall vitality as a result.

I have had the same questions as Gail and appreciate your thoughtful answers. What brought me to your site was your article on the ileocecal valve. I have issues digesting certain foods and it was suggested to me that I might have issues with the ICV. I also have been diagnosed with hypothyroidism. I find myself conflicted about all the information regarding autoimmune, IBS (which is what the doctors call my ICV symptoms), and high blood pressure (my husband, but a factor at the family table). I’ll be trying the smoothies and hope my two kids like them. Thanks and I’ll keep reading. With any luck I’ll find the answers that alleviate the conflict.
When I stumbled upon this website and read your question about the relation between Christianity and veganism, I believe even more strongly that coincidence does not exist. I happened to write a thesis about this subject for university! Since the thesis is written in Dutch, it won’t be very helpful to you (unless you speak Dutch, of course). But a very informative and useful book about this subject that will definitely answer all your questions is “Food and Faith” by Norman Wirzba, an academic writer. You can buy it on Amazon.com. Many passages in the Bible contradict the ones you mentioned. Also don’t forget the first commandment: Thou shalt not kill. It doesn’t say: Thou shalt not kill humans. Enjoy reading!
I have a question about your vegan belief. As a Christian, I am always wondering why people turn vegan especially if they are a Christian. Jesus ate fish, God did send the quail to Israel when they were wondering around and God did tell Noah that they could eat all those animals that were pointed out and well, if we weren’t supposed to eat some meat then why would our bodies have the enzymes and capacity to metabolize it? Also, what about Romans 14:2? For one believeth that he may eat all things: another, who is weak, eateth herbs. See All…: “For one believes he may eat all things, but he who is weak eats only vegetables.” Just curious what your thoughts would be about these questions in my head. Aside from absolutely loving fruits, vegetables, nuts, and the like, I personally shy away from meats and dairy because of health reasons. If you have read my story, I was dying. In a nutshell, the cause of my illness was an acidic pH – caused primarily by coffee and animal proteins, and the lack of the enzymes and minerals that fight off chronic illness. Cancer feeds on acidity. Meat, dairy, and coffee are all very acidic. Raise your pH and increase oxygen in your cells, and cancer cannot live in your body. It was that simple for me to make the choice to stop eating meats and dairy, howbeit that I do now, after many years drink a few cups of coffee a week.
Thanks for writing in Gail. These are very good questions. While there is a lot to address here, I believe my short answer may help you. Why people turn ‘vegan’ can be for a few reasons. There are the philosophical vegans that believe animals have souls and need to be given the same rights as humans (which I explain here on my website as being rather goofy). Then there are those who recognize the environment hazards of meat and dairy in our present day and age. This group have chosen to protect their bodies from the harmful affects of the toxins, chemicals, hormones, antibiotics, and dangerous micro organisms that are so prevalent in meats and dairy today.
Biblically speaking, the fish of Jesus day is not the same healthy fish of today. Today, the fish supply is toxic for the most part unless caught in the wild and where there are low levels of mercury and other environmental toxins that are the result of man’s abuse of our planet. In the day of Noah, the industrial food complex did not exist. There were no commercial feed lots, industrialized food production, and the plethora of manmade chemicals and additives, pesticides, and inorganic substances that are widely used in the industrial food complex that feeds the vast majority of the masses.
The evidence of there being a direct correlation between obesity, chronic illness, and disease, and many of the foods that the masses eat has been more than substantiated. Most of the most prolific illnesses that plague our society today are directly related to the long term consumption of processed and industrially produced foods. Diseases and chronic illness like ADD, ADHD, Autism, Alzheimer’s, Parkinsons, cancer, diabetes, and obesity to name the short list which all cost our society hundreds of billions of dollars each year, dramatically reduce and/or destroy the quality of life for tens of millions of people every year; all of which are responsible for the majority of our healthcare costs as a society. From a purely economical standpoint, poor quality and toxic foods are bankrupting our society through rising costs in taxpayer subsidized/funded healthcare.
I hope this short answer helps you in your quest for Truth about what is best for your body – the temple of God – in this present age where healthy food and water supply is in short supply in most developed nations, especially in America.
